Soya Bhindi Rogani

Ingredients
 

Okra    300 gms
Onion    200 gms
Tomato    150 gms 
Soya granules    100 gms
Ginger    60 gms
Garlic    30 gms
Red chilli powder      7gms
Big cardomom      5 gms
Turmeric powder      5 gms
Coriander powder      5 gms
Cinnamon      2 gms
Cloves      1 gm
Bay leaves      1 gm
Salt to taste
Water     4 cups
Soya refined oil     75 ml
Method

Soak soya granules in warm water for ten minutes. Wash, dry and cut okra (approx. 2 inch pcs) and fry in soya refined oil till semi-cooked. Heat the remaining oil in a pressure cooker, adding cardomom, cloves, cinnamon and bay leaves. Add ginger and garlic and saute till golden brown. Add onion paste and saute for 2-3 minutes before adding the tomato paste. Cook till the oil starts separating from the micture. Add salt and the remaining spices. Add the granules and saute for 5 minutes. Add water and let the gravy thicken. Add okra and pressure cook for 2 to 3 minutes. Serve hot with chappaties or boiled rice.
